Last night, Dad made Mom her very favorite dinner, “Black Pepper Tofu”. Now, before you humans go turning up your noses at the word, “tofu”, please take a look at the picture below:
This is spicy, absolute deliciousness. Flavored with jalapeno, garlic, ginger, scallions, green onions, and freshly-ground black pepper, this is not a tofu dish to be trifled with!
This dish is not, however, vegan because it does contain butter.
While Dad and Jamie were at the auto show, Mom did all the prep work for the dish. She didn’t mind, because she and I were spending some quiet time alone, and she likes doing that kind of stuff. I watched as Mom carefully put each ingredient into a separate bowl. Pretty soon the house smelled pretty scallion-y. Mom said it was a good thing she has the Lemon Citrus Soap or she’d never get the smell out!
When Dad and Jamie came back, they surprised Mom with the cake (that I showed you yesterday), and Dad got out the big wok and fixed the dish up just right. I got to eat some white rice with my kibble, and Mom let me try just a corner of the tofu. She said she couldn’t let me lick the plate because it was too spicy for me.
Dad found the recipe for Black Pepper Tofu in the “Chicago Tribune” some years ago, right around Thanksgiving. It’s Mom’s favorite “special dinner food” and Dad’s made it for her alongside a turkey for Thanksgiving. There are always turkey leftovers, but never leftover tofu.
